Born from decades of agricultural passion, this exceptional coffee traces its roots to El Vergel Estate in Tolima, where cultivation began in 2010 and the first varietals were harvested in 2015. In 2017, facing challenges in the local market, Martha, Shady, and Elias reimagined their approach - innovating to add value and forge a closer connection between producers and roasters. Their dedication laid the groundwork for a coffee that celebrates craft, resilience, and forward-thinking farming.
This decaffeinated offering undergoes a meticulous process designed to preserve and elevate flavour. It begins with carefully managed fermentations that unlock distinctive taste notes, followed by caffeine extraction using circular tanks filled with water and ethyl acetate, reducing caffeine levels to just 0.1%. The result is a remarkably smooth, aromatic, and flavourful cup - proof that decaf can be every bit as vibrant and enjoyable as its full-caffeine counterpart.
