Sachimore is a coffee variety developed in Ecuador that blends strong genetic heritage with a remarkably complex sensory profile. Its name originates from the farm and project where it was initially stabilised. It is known for its excellent adaptation to mid–high elevations, its strong response to controlled fermentations, and its high sugar concentration in the cherry.
Agronomically, Sachimore shows uniform plant structure, stable productivity, and notable natural resistance to common Andean coffee diseases. This makes it a preferred variety for producers seeking high quality without sacrificing plant health or yield.
